The Adriatic Sea is just amazingly beautiful. And, when you’re on the Dalmation coast of Croatia, it seems even more spectacular and glorious! The waters shimmer and their color is a vibrant turquoise blue. Coastal cities like Debrovnik and Split are now hot hip travel destinations. And, it’s easy to know why. They are steeped in history with marble streets and 16th century embattlements. From open air markets, food and fish, to posh gorgeous restaurants, this place is like being in a dreamlike state!

Some of the best food I’ve ever had was along the Dalmatian coast. The ruins and the influence and impact of the rule of the Venetian Empire in Italy are notable not only in the relics and architecture but also in the food. This adriatic asiago cheese sauce reminds me of sitting leisurely at an outdoor restaurant sipping wine, dipping good bread, feeling the warm summer breeze, listening to the music in the piazza, and knowing that hundreds of years ago, things were not quite the same. Culture is preserved in so many ways~including our foods.

Yield: Makes: About 1 1/2 cups

Ingredients

  • 1 1/3 cups half and half cream (or half whole milk and half cream)
  • 8 ounces asiago cheese, diced into small cubes
  • 1/2 tsp. coarse ground pepper
  • 1/3 cup fresh basil, chopped and loosely packed

Instructions

  1. Put a sauce pan on simmer heat.
  2. Add the milk and cheese. Let the mixture slowly simmer melting the cheese for about 20-25 minutes. Stir occasionally.
  3. Add the pepper about half way through the melting. Before serving add the chopped basil.

    I dream of having this over chicken and broccoli spears, with tarragon instead of basil, and baked in the oven, till bubbly, then served with Linguine Alfredo on the side. I had a similar dish in a restaurant once and it was fabulous!
