Nuts for your health is well-documented. Basically any type of nut is going to be good for your health, well, unless you’re allergic to nuts then certainly stay away from the nuts. 

Nuts are good for lowering LDL or ‘bad’ cholesterol because they’re rich in heart-healthy polyunsaturated fats and mono-saturated fats. And, they’re choked full of fiber, protein, vitamins and minerals. 

Benefits of Walnuts

The benefits of walnuts are well known. Just in case you need a refresher of the good things about walnuts, here you go. They’re a great source of Omega 3s, plus they’re rich in antioxidants, which fight the free radicals in the environment. There’s some evidence that they may help lower blood pressure and help manage type 2 diabetes. Walnuts are a great go to snack when you have the hungries. 

Lawsy, I eat a lot of walnuts. One of my favorite ways to eat walnuts is to add them to my cereal or yogurt. A drizzle of honey, maybe some fresh fruit, and I’m ready to go. Keeping nuts in a small bowl on my kitchen counter is perfect when I need a pick-me-up healthy few bites to quell my hangries! 

Walnut Costco

I love buying my walnuts at Costco. Flat out you get the most bang for your buck with these big bags of nuts. Not only do I love their walnuts, but also their almonds. And, I make sure I store them all properly as it’s hard to eat that many nuts in a short amount of time. These walnuts are perfect for roasted walnuts. 

Storing Walnuts

Walnuts can go rancid quickly. So, it’s important to either refrigerate or freeze them. I do both depending upon whether I’m traveling and will be away for a while or not. If I’m gone for more than four to six weeks, then the bag of nuts goes into the freezer. I’ll also put them in smaller zip lock freezer bags and take out just a few at a time. Once you open the package it’s important to preserve them in something that’s air tight and secure. 

Warm weather makes nuts go rancid faster. That’s because they have a lot of oil in them. You can safely store nuts at room temperature for about 3-4 weeks. Make sure you’re using an air tight container. Anything longer than that period at room temperature may compromise the flavor and taste of your nuts. 

Walnuts Roasted

While I eat walnuts raw, walnuts roasted are just a step above with flavor. Toasting brings out the nuttiness more. And, it doesn’t take long to roast walnuts. About ten minutes and they’re ready. Now this recipe also calls for sugar and cinnamon, so you’ve got a candied like nut! These roasted walnuts would be great on my delicious pumpkin pie

Cinnamon Toasted Walnuts

Adding the cinnamon to the toasted walnuts adds another dimension of flavor. I’m using turbinado sugar because it’s got a somewhat larger crystal and just adds a little more crunch. Turbinado sugar is also known as sugar in the raw. 

Sugar in the Raw

Unlike regular white or caster sugar, turbinado sugar comes from the first pressing of sugar cane. What you have is more of the natural flavor of the plant and a subtle natural molasses taste. The larger crystals are darker and more round than regular granulated sugar or brown sugar. In essence, sugar in the raw is just that. Sugar with less processing.

Yield: 4 cups

Roasted walnuts with seas salt and cinnamon! Perfect topping for salads, yogurt, cereal, a charcuterie and more. Take walnuts to a higher level of yum!

Ingredients

  • Preheat oven to 350
  • 4 cups whole walnuts
  • 3 Tbl. butter, melted, salted
  • 3 Tbl. Turbinado sugar
  • 3/4 tsp. ground cinnamon
  • 1 tsp. sea salt, divided

Instructions

Put the walnuts in a mixing bowl. Drizzle on the butter and add the sugar, cinnamon and 1/2 tsp salt.

Toss well. Spread on a cookie sheet lined with parchment paper.

Bake in a preheated 350 oven for about 12-15 minutes or until golden brown. Remove and sprinkle the remaining sea salt on the walnuts while still hot.
