Leftovers always call for a new design. The once beautiful New York grilled steaks and baked potatoes that were leftover from dinner were perfect a couple of days later for breakfast. Some quick changes and there was a new meal! PepperJack Steak Wraps & Fried Taters!

What you need:
Leftover grilled NY strip (or any type of steak)
4 slices of pepperjack cheese cut in 3 strips/each
5 small soft tortillas cut in half & warmed in oven or grill (half moon shape)
1/4 cup canola oil
1 large leftover baked potato
1 cup sliced sweet peppers
1 onion cut in pieces
Salt/Pepper to taste
Salsa & Sour Cream for garnish/serving
What you do:
1. Cut steak in thin slices. Coat a skillet with cooking spray and warm meat. Take a strip or two of steak a strip of the pepperjack cheese and roll in the soft tortilla. Return to the skillet to keep warm and let the cheese melt.
2. In a heavy skillet heat oil on medium heat. Add potatoes, peppers and onion and fry about 20 minutes or until the peppers and onion are al dente (the potatoes are already cooked).
