This dish is a slight variation of the one created by the talented Carrie at Carrie’s Experimental Kitchen…I love her cookbook for many reasons~~the recipes are easy to read (good font and size), they’re simple and healthy, many a low glycemic, and they’re Mediterranean-inspired.  In this particular recipe, Carrie created an ‘Orange & Scallion Orzo’ but since I didn’t have orzo nor orange juice, I improvised!  Isn’t that what life’s about~~being resourceful and fashioning something simlar even if you don’t have all the precise ingredients!  So, I substituted arborio, which is a superfino rice for risotto, and I squeezed the juice of ‘Cuties’, those little tangerines that kids love, into the recipe rather than orange juice.  Also, since it’s the holiday season and since I had a red bell pepper sitting on my kitchen counter that had to be used, I decided to dice it up and add to the dish~~yes, festive and another interesting little crunch and flavor~~a perfect way to ‘boho’ Carrie’s already awesome recipe, and make it my own!  That’s what life’s all about~~putting your personal twist or stamp on whatever you do making it reflect you!

Orange & Scallion Arborio

What you need:

1 1/2 cups arborio rice

2 tbl butter

2 cups chicken broth

2 cup water

1 tsp sea salt

1/2 cup fresh tangerine juice

2 sliced scallions

2 tbl chopped chives

1 cup diced red bell pepper

What you do:

1.  Melt the butter in a medium size saucepan.  On medium heat, add the rice and brown it slightly.

2.  Add 1 cup of chicken broth,  1 cup of water, and the sea salt.  Blend together.  Cover and let cook on low allowing the rice to absorb the liquid.  Stir frequently.

3.  Continue adding more chicken stock and water as the rice needs.  When just about tender (after about 20 minutes), add the juice and blend.  Cover and let simmer on very low for another 5-10.  Stir frequently.

4.  Add the scallions, chives and red bell peppers and blend.  Cover and turn off heat.  Let sit about 5 minutes before serving.
