You’ll wonder what’s in these vixen bites that have an ever-so-slight crunch when you eat one! It’s the vixen in all of us coming through! Between the mystery crunch, the extra chocolate blast and then the rich nutty Sumatra eating just one or two will bring complete bliss and nirvana! Sumatra Bittersweet Chocolate Vixen Bites~~feel the rush!
Makes: About 5+ dozen
Preheat oven to 325
What you need:
1 chocolate cake mix
(Note: You can make the chocolate cake from scratch! Here’s an easy recipe for chocolate cake!)
4 ounces Rodelle Gourmet Baking Cacoa
¼ cup finely ground Sumatra coffee beans (or similar dark rich blend)
1/3 cup raw sugar
1 cup soft cream cheese (microwaved on high about 20-25 seconds to soften more)
1 cup sweetened condensed milk
1 tsp Rodelle Vanilla
Garnish: Chocolate Ganache, Decorative Sprinkles
What you do:
- Prepare cake according to package directions adding baking chocolate and ground coffee to batter. When done, let cool well. Crumble and put in a food processor and grind into a meal like texture adding the raw sugar last and pulsing several more times.
- In a large mixing bowl, combine softened cream cheese, vanilla and condensed milk and blend. Begin adding a cup at a time (you’ll probably have a total of 4 ½ to 5 ½ cups of cake meal) blend and working together. The final dough should be similar to play dough.
- Using a small springform scoop, place ‘organically’ shaped balls into individual mini-cupcake holders which are closely placed together on a cookie baking sheet or in a mini-cupcake holder pan.
- Bake in a preheated 325 oven about 7 minutes. Remove and let cool and decorate! Ganache Recipe~~just click!
