Since I had been to Costco and bought a big container of Campari tomatoes…since I had gotten lucky and bought a large container of Fage Greek yogurt for half price (love marked down stuff!)…and since my fresh basil was on the verge of looking really sick and pitiful, I decided to make this ‘Campari Yogurt Marinara Sauce’ . When I served it with pasta, my son asked me to toss in some pepperonie and prosciutto, so I did, but that’s not here in the recipe. But, have at it if you want to because it was great! This is one of those share recipes! Thursday’s Treasures
Serves: 4
What you need:
4 tbl olive oil
2 tbl whole crushed garlic
2 tbl sliced shallots
6 cups Campari tomatoes cut into quarters
1 cup whole leaf basil
½ tsp dried oregano
½ tsp red chili flakes
1 tsp sea salt
1 tsp fresh ground pepper
½ cup Greek plain yogurt
½ cup fresh grated pecorino (or parmesan, asiago)
What you do:
In a large skillet over medium heat drizzle olive oil and sauté the garlic and shallots until translucent. Add the Campari tomatoes and toss well cooking for about 5 minutes. Reduce heat to medium low and add basil, oregano, pepper flakes, salt, and pepper and blend. Let simmer about 15 minutes and stir a few times. Increase heat to medium again, add the yogurt and grated cheese and blend melting and mixing in well. Continue cooking about 5 minutes. Reduce heat, cover and reduce heat to simmer for about 20 minutes. Read to eat!
