Flat Bread Ancho Chili Sausage & Summer Veggie Pizza

Everyone’s got to have a ‘boho’d’ pizza (To ‘boho’ a recipe means you let your creativity surge, think of something new to do, and you make sure it’s memorable and different!)…something that they can pinch hit and make in a skinny minute! ‘ Flat Bread Ancho Chili Sausage & Summer Veggie Pizza’ would be mine.

Actually, Ben had a few guys over for a meeting at the house, so around noon time, I figured those boys needed to be fed…having raised three boys, I know that their pits are bottomless and endless, that there’s no such thing as being too full, and that a good hour or so between feedings, and they’re ready to eat again!  It had been nearly 3 hours, so I figured these lads were ravenous!  I’d already roasted the veggies the night before, and these were leftover…even if I’d had to start from scratch with them, it wouldn’t have been a big deal.  Of course, to get a more rustic feel and even taste to these oven roasted pizzas, I used both a pizza stone and a large cast iron skillet–my cast iron grounds me, keeps my food rustic, and takes me back to my grandparents’ peasant Croatian roots–that’s a good thing!

Flat Bread Ancho Chili Sausage & Summer Veggie Pizza

Preheat oven to 400

Makes:  6 flatbread pizzas

Flat Bread Ancho Chili Sausage & Summer Veggie Pizza

What you need:

1 cup olive oil (divided)

1 lb ground Italian Sausage

1 tsp ancho chili ground pepper

½ tsp sea salt

½ tsp fresh ground pepper pepper

6 cups of roasted fresh veggies (slice or chop in medium size chunks:  squash, zucchini, onions, cherry tomatoes)

(Note:  Just slice veggies, coat with canola cooking spray, toss and bake in 400 preheated oven on a parchment lined cookie sheet for about 15-20 minutes.)

3 cups fresh lettuce leaves (i.e., your choice:  arugula, European, spinach, etc.)

6 pieces of flat bread

1 cup freshly grated asiago cheese

1 cup goat cheese crumbles

What you do:

In a large cast iron skillet over medium heat, put 3-4 tbl of olive oil.  Add meat and brown.  Add ancho chili powder, salt and pepper, blend.   Turn off heat and set aside.

Meanwhile, the remainder of this recipe is to layer each ‘pizza’ flat bread with all the good stuff. (About equal amounts of ingredients on each pizza.) With a pastry brush, coat each piece of flat bread with olive oil.  Add some meat crumbles.  Add some lettuce leaves.  Add some roasted veggies, grated cheese and goat cheese crumbles.  Drizzle remaining olive oil over each of the pizzas. Bake in preheated 400 degree oven about 7+ minutes.  Remove and serve immediately.
