Ideas and inspiration for creating new things come from so many experiences and places and people. This particular creation was inspired by one of my dear foodie friends, Linda Pelaschier Mihlebach–now this girl can throw down some good food. She’s a class act and a great cook with style and panache. No idea how we got on the subject of frozen cherries, but we did and after hearing her talk about them, I thought ‘I have to make some!’ So, I took Linda’s inspiration and created my version of this delectable dainty frozen creation ‘Yogurt Dipped Chocolate Drizzled Frozen Cherries’! Makes: 18+ cherries
What you need:
18-24 (appx) fresh cherries with stems on
1 (6oz) container of Greek lemon yogurt
½ cup whipped cream cheese
1 tbl confectionary sugar
Chocolate ganache drizzle:
4 oz semi-sweet chocolate
¼ cup heavy cream
What you do:
Have cherries cleaned and lined up for dipping. Line a plate that will fit into the freezer with parchment paper.
In a small bowl, mix together the yogurt, cream cheese and confectionary sugar. Blend well for several minutes. Some ‘lumpiness’ will remain—that’s o.k.
Carefully holding the stem of a cherry, dunk it in the yogurt mixture and twist it around coating. Place on parchment paper. Leave adequate spacing between cherries. Repeat with all the cherries. Put cherries in the freezer for about an hour. Refrigerate remaining yogurt/cream cheese mixture. After the first freeze, remove from freezer and repeat the yogurt dipping on the frozen cherries. Return to freezer another hour or more.
When ready to serve make the chocolate ganache. In a double boiler over simmering water, place chocolate and cream. As the chocolate starts melting, stir and blend the mixture. Once the chocolate is completely melted and smooth, place it in a squeeze plastic bottle. (Note: If small opening clogs up, use a toothpick to clean opening.) Drizzle each individual cherry with the ganache and return to freezer until ready to serve.
