Brandied Fruit Frozen Pie

I’m like a dog with a bone with some things I create in the kitchen.  What I mean is that I make something, use an ingredient or plural of that and then I see various applications of how it can be used.  This recipe is an example of that.  Initially, I started off with putting some beautiful berries, including pitted cherries, in a bowl, adding some brandy and letting them bathe for several days in the goodness.  Brandied fruit frozen pie…it doesn’t get any better!

I could have stopped there.  But, no, like a dog with a bone, I looked at other ways I could use it…fruit drinks, fruit muffins, fruit slushies, fruit tartlets, and now, yes, fruit frozen pie!  For good measure, buy a can of real whipped cream and fizz to your heart’s delight!

Makes:  One 9-10″ pie

Preheat oven to 350 (to bake crust only)

What you need:

Crust:

1 cup old-fashioned oats

1 ½  cups finely ground honey graham crackers

2 tbl sugar

6 tbl melted butter

Filling:

8 cups mixed fruit (your choice) tossed & covered with ½ cup brandy and marinated 24+ hours

1 cup whipped cream cheese

½ cup sour cream

½ cup whipped topping

2 tbl sugar

2 tsp lemon zest

2 tsp lemon juice

Topping:

2 cups pureed berries (I used blueberries and blackberries)

2 tbl honey or agave

Topping:

(Note:  Yep, you can make it yourself, but I’m taking a short cut–plus, the designs I can make with this are a lot of fun!)

1 can of Readi-Whip Real Whipped Cream

What you do:

Crust:

Put oats and graham crackers in a food processor and pulse until fine.  Put in mixing bowl, add melted butter, and pat into the bottom of a 9” pie plate.  Bake in preheated 350 oven for about 15 minutes or until golden brown.  Remove and let cool thoroughly. 

Filling:

Put fruit in a food processor and pulse until creamy and smooth.  Transfer to a a large mixing bowl and add remaining ingredients.  Blend and combine.  Put in refrigerator and let chill about 30 minutes or until you are ready to place in pie plate w/crust.

Pour into pie plate with crust.  Then spread the ‘topping’ on top.  Place in freezer 5-6 hours.

Topping:

Combine pureed berries and honey.  Spread on top.  Place in freezer for 5-6 hours.

Serving:

Remove from freezer about an hour before serving to thaw and be able to slice.  Top each piece with some of the whipped cream.
