This is one of those go to everything dressings that you can use in an insane number of creative ways! So, don’t just stay in your ‘salad’ mode with this dressing/sauce.
Get creative…’boho’ it and make it something that knocks your socks off like how ’bout as a marinade for chicken? OK, don’t like that idea, well, then, let’s use it as a pizza base–skip the red sauce and go white! I might even try it in a lasagna, maybe a funky mac n’ cheese, or drizzled atop or inside of a grilled cheese sammich!
Makes: About 12+ ounces
What you need:
1cup mayonnaise (you can use light)
1cup goat cheese chopped into crumbles
½ cup buttermilk
2 tablespoons red wine vinegar
1 tbl dried parsley
1 tsp dried basil
½ teaspoon sea salt
½ teaspoon freshly ground black pepper
What you do:
In a medium size mixing bowl combine all ingredients and blend and stir well. If you want a more smooth consistency, put in a food processor and pulse a few times. I prefer a chunk lumpy goat cheese dressing.
Refrigerate a few hours before serving.

I use buttermilk for a chicken marinade so this would be a nice twist!
