Pork—the other white meat! It really doesn’t take that much work to create the perfect tenderloin—simple, easy, quick, and sure to please!
There’s nothing more delicious than a juicy tender pork tenderloin. My foodie friend on Facebook, Trish, has a company, ‘The Mystic Blue Spice Company,’ where she creates her own delicacies to season your meats and veggies. The company is family owned and operated, and there’s a lot more they do than just spices. There’s special sugars, rubs, gift sets, and seasoned salts! Everything is all natural with no preservatives or MSG! I like that!
I served this succulent pork with my ‘Fresh Cherry Grape Mint Sauce.‘ Oh, my, gosh, you’ll need nothing else with this meal!
Serves: 6-8
What you need:
2 to 2 ½ pork tenderloin
1 tsp sea salt
1 tsp fresh cracked pepper
4 tsp Gyro seasoning
¼ cup olive oil
8-10 sprigs of fresh mint
What you do:
Place the pork tenderloins on a baking sheet. Coat each with salt, pepper and the gyro seasoning.
Using cooking twine, tie the two tenderloins together well. Then take the mint springs and stuff inside, leaving some of the leaves exposed. Coat well with olive oil. Drizzle some of the oil between the tenderloins.
Cover and refrigerate for a couple of hours before rotisserie grilling. (Note: This can also be oven baked. Cover meat. Preheat oven 375. Internal temperature should be about 155 degrees.)
Depending upon the weight of your tenderloins, cook for about 20 minutes per pound. Remove from grill. Wrap in foil. Let the meat rest about 5-10 minutes before slicing and serving.
