Katrin’s Wedding Party!

In the Facebook Universe of Foodies, you get to know each other pretty darn well.  Well, some of your foodie friends.  I mean you talk several times a week, see what people are cooking, what they’re doing on a
daily basis, like running to the grocery store, having to call in the Maytag washer repairman, or run a carpool, and you know some of the things that are happening in their lives.  It’s like one big family!  Naturally, when there are things to celebrate, we band together.  Families and friends throw parties for each other, especially when it’s something as exciting as a wedding!

 

One of my favorite foodies is Katrin who’s from Canada.  Her blog is called ‘Running with the Devil(ed) Eggs”, and you guessed it, same name for her Facebook page!  Katrin love life, and she’s always doing cool things on her page like hosting ‘sock hop’ parties.  She’s a young eneretic mommy withone young son.  Of course, her favorite thing in life, besides her kiddo “Ugghhhhhhhhh’…his nickname because he always says ‘uuughhhhh’…is to bake and cook!  So, Katrin’s nickname is Mrs. BM for ‘Betty Martha’ as in Crocker  and Stewart.  Next week, April 19, 2012, Katrin’s marrying her ‘Mr. Big’ or ‘Mr. BM’ as he is fondly called.  They’re trekking from the chilly winds and weather of Canada to the warm sunshine of Florida for this glorious occasion.  While we can’t be there with her, we CAN host a party for Katrin, Uuggghhhh, and Mr. BM.  And, that’s precisely what I’m doing!

  1. Congratulations and many blessings in your new journey together!
    I would love to share my Stir Fry Egg Roll recipe with you guys!

    1 lbs. of ground beef, pork, or chicken (I use beef)
    1 head of cabbage
    You can also add bok choy (optional)
    3-4 medium carrots
    1/4 onion chopped finely
    3 garlic cloves, minced
    2 heaping tsp of fresh grated ginger
    1/2 tsp garlic powder
    3 TBS oil (sesame or vegetable)
    4-5 TBS low sodium soy sauce
    2 TBS rice vinegar
    1/2 tsp fresh ground pepper

    First, shred cabbage with a serrated knife. It is important to cut the cabbage with a serrated knife because it will shred the cabbage. Next, chop bok choy and then place cabbage and bok choy in a large mixing bowl. Shred the carrots with a vegetable peeler and mix well.

    Then brown your ground meat with finely diced onions and minced garlic. Fill the pan full of cabbage and carrots. Now you add fresh grated ginger, oil, soy sauce, vinegar, garlic powder and black pepper.

    If you have to split the mixture because you do not have a large sauté pan or wok, half the ground meat, ginger, oil, soy sauce, vinegar, garlic powder, and black pepper between batches.

    Once you have everything in the pan toss with tongs until coated evenly. Cover and cook over medium heat until cabbage has wilted.

  5. Best wishes and a lifetime of laughter and happiness ! My husband of 25 years loves peanut butter cookies….his grandma had the easiest recipe ever:

    1 C peanut butter
    1 C sugar ( I cut this to 2/3 C and they were fine)
    1 egg, beaten
    A little sugar for crisscrossing the tops.

    Preheat oven to 350 degrees.
    Mix peanut butter, sugar and egg together and blend well . Drop by tablespoonsful on non-stick cookie sheets, dip fork tines in a little sugar to flatten tops in a criss-cross pattern. Bake in a 350 degree oven 7-8 minutes. Let sit a few minutes on the sheets , then transfer to cooling rack.

    No flour so they are gluten-free !

  6. Congratulation Katrin, a little contribution from me, well it will an Algerian Baklawa, as I dont have any website I thought to type my precious recipe for you :-)

    To make 38/40 pieces:

    350g medium ground almond (or ground pistachio)
    50g icing sugar
    Very little accent of cinnamon (as it can be quite over powering)
    150g unsalted butter melted
    450g filo pastry

    For the syrup :
    450g granulated sugar
    300ml water
    1 tbsp rose water

    1 – First make the syrup by placing the sugar and ater in a pan and bring to gentle boil and then simmer for 10mins until syrupy, stir in the rose water and leave to cool.

    2 – Mix together the nuts, icing sugar and cinnamon, preheat the oven to 160 degree (325 F/ Gas 3) and brush a large rectangular baking tin with little melted butter.

    3 – Taking one sheet of filo pastry at a time (and keeping the remaining one covered with a damp cloth) brush the pastry with melted butter and lay on the bottom of the tin, continue until you have six buttered layers of pastry in the tin, spread half of the almond mixture over the pastry, pressing down with a spoon.

    4 – Take another 6 pastry sheets brush with melted butter and lay over the nuts mixture to cover, sprinkle ver the remaining nuts and with a final layer of 6 filo pastry sheets, brush again with butter. Cut the pastry diagnally into small lozenge shapes using sharp knive, pour the remaining melted buter on the top.

    5 – Bake in the oven for 20 mins then increase the oven temperature to 200 Degree ( 400F/ Gas 6) and bake for further 15 mins until golden and puffed.

    6 – Remove from oven and drizzle about quarters of the syrup over the hot pastry, reserving the remaining for serving, and Bonne appetit !

    Ps : We serve Baklawa as sweet treat in Algerian weddings.

    What I’ve decided to bring to your Wedding Party is a favorite dish called Veal Chops Tchoupitoulas, as served at the renowned Commander’s Palace restaurant in New Orleans.   26. Best Wishes to you! This is a very easy recipe and very good! Hope you like chocolate! 1 package semisweet chocolate chips, 1 package white chocolate chips, 1 small can peanuts (Planters). Mix the chips together and melt in microwave. Add peanuts and mix well. Drop by teaspoon full on to waxed paper and chill! Store in refridgerator! Chocolate Peanut Candy
