Creamy Celery Shrimp & Kiwi Fruit Goodness


I have no idea what this is…soup, entree, sauce, appetizer…bottom line, it’s goodness and purrrteee healthy in a bowl.  I’m calling it  Creamy Celery Shrimp & Kiwi Fruit Goodness!   All your organs will start singing, your tastebuds will blossom and scream with excitment, and your skin will glow as it soaks in the nutrients!  So quick and easy to prepare…all under about 15 minutes.   I thought about adding some corn, but decided to keep it simple.  It has my beloved cumin in it, and, yes, it’s got a slight kick!

Creamy Celery Shrimp & Kiwi Fruit Goodness

Serves: 2-3

What you need:

2 tbl butter

1 cup celery cut in pieces

10 oz shrimp (one bag:  deveined, tail-off, previously frozen works, size 16-25)

½ cup white wine

½ cup plain yogurt

1 tsp corn starch (plus ¼ cup water)

¾ tsp sea salt

¾ tsp ground cumin

3/4  tsp coarse ground pepper

½ tsp dried mint

2 cups chopped fresh kiwi fruit

What you do:

In cast iron skillet over medium heat, melt butter.  Add celery and sauté about 3 minutes.  Add shrimp and sauté about 1 minute on each side.  Increase heat to medium high and add wine.  It should sizzle and start a simmering boil.  Allow to cook about 3 minutes.  Reduce heat to medium. Add water to corn starch, blend, and then drizzle into shrimp/celery mixture stirring constantly and blending well.  This will thicken slightly the sauce.  Add salt, cumin, pepper, mint and blend.  Turn off heat.  Place shrimp mixture in a bowl.  Add chopped kiwi fruit and serve immediately.

This can be eaten as is or served with pasta, rice, grits, polenta, etc.—your choice.
