Oh, yes, for sure, the flavorful spices: Chicken curry typically incorporates a blend of aromatic spices like cumin, coriander, turmeric, ginger, garlic, and chili, among others. These spices create a complex and rich flavor profile that is both satisfying and enticing to the taste buds.

Now, what’s going to make this dish so dang easy? Well, it’s going to be the ‘soup’ that you use in it. Not just any soup, but either Butter Curry or Thai Chicken Curry soup from Kettle and Fire. Just make sure that your chicken is at a finished temperature of 165+. Use your meat thermometer to check that largest piece for this temp. And, another thing, the bone in and skin on pasture raised chicken delivers so so so much more flavor and nutrition.

One Skillet Curry Chicken

Quick One Skillet Curry Chicken

Yield: Serves: 3 to 4 folks

Ingredients

  • 2 lbs. pasture raised chicken thighs, bone in skin on
  • 4 Tbl. extra virgin olive oil
  • 4 garlic cloves, thinly sliced
  • 1 1/2 cups sweet onions, medium to large dice or French slice
  • 1 box (16 oz.) Kettle and Fire Butter Curry or Thai Curry soup + 1 1/2 cups water to rinse out box
  • 6-8 cups fresh baby spinach, packed
  • GARNISH: Grated parmesan regianno, optional

Instructions

  1. Preheat oven to 400
  2. Heat a braising skillet on medium high. Let it get hot. Add the olive oil. Put the chicken in and brown on both sides, about 2 minutes per side. Salt and pepper to taste.
  3. Add the garlic, onions, soup/water and give a blend. Cover tightly with a lid.
  4. Finish cooking in a preheated 400 oven for about 20 minutes or until the largest piece of chicken registers 165+ degrees with a meat thermometer. Turn off oven!
  5. Remove the lid. Add the spinach to the top. Replace the lid. Return to the hot oven about 5 minutes or so until the spinach wilts.
  6. Pull out of the oven and blend the wilted spinach into the sauce and chicken.
  7. Ready to serve!
