I love homemade bread, but I’m not willing to spend a LOT of time. This date nut bread hits on all cylinders! Homemade, delicious, and easy!

How to Make Bread without Yeast

Is it possible? You’re darn tootin’ it is! 

As a ‘rogue’ baker, I’m a gunslinger in the kitchen, and I look for shortcuts and easy simple ways to make homemade bread. 

I watched my Grandma make bread and yeast rolls every week, usually on Thursdays. And, believe me, I’d sit there for hours because it was almost an all day affair. 

Self-Rising Flour Bread

Self-rising flour is one way to make bread. And, a lot of simple bread ideas, flat breads, and more are made with just a few simple ingredients. Flour, water, salt, sometimes oil or butter.

I’m known for my easy baking recipes, and when I do bread it’s no different. While my sweets and bread might be rather rustic and natural ‘looking’, I assure you they’re totally delicious!

Now this date nut bread recipe is so simple and easy. There’s just a tad bit of maple syrup, which you could adjust depending upon how sweet you want your bread. 

I preferred a slight sweetness because I love to butter, toast under the broiler and add jams and jellies.

Another ingredient that will add sweetness to the bread? The dates! Oh, yes, they’re packed with antioxidants and natural sweetness! Perfection.

Nothing goes together better than dates and nuts. It’s very Middle Eastern, and when I wasn in Israel and Morocco, I loved munching on both. They were abundant from street venders. Such healthy snacks!

Easy Date Bread Recipe

A few other things about this easy date bread recipe. 

Kefir is needed. Some important things to not change:

  • Use whole milk kefir 
  • Kefir acts like ‘yeast’.
  • Regular self-rising flour. I’ve not tried with GF.
  • Additional baking powder surely helps the bread.

Yeast Free Bread

Kefir, a fermented milk, can come from any type of milk, coconut, rice, goat, cow, sheep. 

I used cow’s kefir. It’s usually made by culturing milk with kefir grains that give a mix of yeasts and bacteria. 

I find my kefir in the section with yogurts at the grocery store.

Quick Date Nut Bread

Yield: Makes One Loaf

Ingredients

  • 1 1/2 cups flour, self-rising, see notes on GF
  • 1/4 tsp. salt
  • 1 Tbl. baking powder
  • 1 1/3 cups kefir milk, whole milk
  • 1/4 cup maple syrup
  • 1 cup walnuts, chopped
  • 2/3 cup dates, chopped
  • Sea salt crystals, optional

Instructions

  1. Preheat oven to 375
  2. In a large mixing bowl, combine the flour, salt and baking powder. Whisk together.
  3. Pour in about three quarters of the kefir milk and maple syrup and blend. Add the remining kefir and blend into a thick batter.
  4. Add in the nuts and dates and work into the batter
  5. Pour into a parchment paper lined about 8-9" skillet. Sprinkle with some sea salt crystals.
  6. Loosely cover the top with parchment paper. Bake for about 25 minutes, remove parchment paper, and cotinue baking another 12 to 15 minutes.
  7. Remove and let the bread cool.

Notes

1. GF flour 1:to:1 plus baking powder could work. I've not used it, but worth a try.

2. The skillet allows the bread to spread out and cook more evenly. If you use another type of baking pan, like a bread loaf pan, you may need to adjust the amount of time depending upon center doneness of the bread. Test with a wooden skewer.

3. This bread is compact and dense. Perfect for butter and toasting under the broiler.

4. Some might want to use goat milk kefir, I can't guarantee the exact same results. But, you could try.

    Can I use water kefir instead?

    1. No, sorry, you must use kefir. You could substitute buttermilk + whole milk Greek yogurt. Water will not work. Kefir is the magic in this recipe. xoxx ally

    Is AP flour the same thing as self rising?

    1. Hi, Jen, alas, no, you must use Kefir milk. It is a fermented type milk that helps provide the ‘rise’ for the bread. Regular milk will not achieve this. Also, there’s a big difference b/t AP and SR flour. You must use SR as well as the baking powder. Give it a try, and I sure hope you love it as much as we do! xoxx ally
